Lobster Risotto with Shrimps


4 scoops of rice for risotto (arborio)
3 small tails cooked lobster
16 small shrimp
1 bunch scallions
1/4 a large white onion
1/2 cup white wine
Cucharade 1 tablespoon margarine or butter
1/2 cup peas
Caldo homemade or purchased from quality fish (example: Bar Harbor fish stock)


1- Fry the shrimp in a pan with a little olive oil and reserve
2- In a cazerola with olive oil and saute the onion over low heat scallions
3- When you have changed color, add the rice and mix well for a couple of minutes
4. Like all risottos go añadiento the broth slowly and gently stir constantly
5- After 10 minutes add the wine
6- At 15 minutes put the peas, prawns and lobster
7- Add the margarine or butter
8- This process will take 20 minutes total, remembers going añadiento broth continuously and gradually throughout this time
9. Let stand covered 10 minutes
