Fish en Papillote



  • 4 loins halibut or other white fish (600 gr.)
  • 2 leeks
  • 2 carrots
  • 1 bunch of fresh garlic
  • 1 small zucchini / or 1 eggplant (this vegetable can change it to your liking)
  • 1 small glass of white wine
  • extra virgin olive oil
  • salt
  • pepper



1- Clean zucchini, leeks and fresh garlic, peel and chop carrots all in fine julienne. Reservation

2- Extends 4 large pieces of aluminum foil.

3- Place in the middle of each sheet a mixture of vegetables. Salt and pepper and pour a little oil.

4- Place over a loin of fish. Salt pepper. Pour a little oil and a white wine over and closes tightly every role (so that steam cooking is not out) so that there is about square packages neatly folded at the corners.

5- Place the packets on baking sheet and bake at 220 ° C (preheated oven) for 10 minutes.

6- Put each packet on a plate and with scissors let them cross to open (be careful not to burn yourself with the steam).

7- Serve on a plate and pour the juice.
