Red wine Poached Pear


  • 8 ea Pear
  • 1480 g Red wine, such as Cabernet Sauvignon or Syrah
  • 275 g Sugar
  • 10 g Cinnamon, stick whole
  • 2 g Nutmeg, ground
  • 3 g Mace, whole
  • 4 g Clove
  • 3 g Allspice, whole



1 – Prepare a 176 °F / 80 °C water bath


2 – Combine ingredients and simmer

  • 1480 g Red wine
  • 275 g Sugar
  • 10 g Cinnamon, stick whole
  •  g Nutmeg, ground
  • 3 g Mace, whole
  •  4 g Clove
  •  3 g Allspice, whole
 Combine all ingredients in a pot and simmer until liquid has reduced to about a fifth of its original volume or weight. Strain

3 – Peel pears

8 ea Pears


Fill a container with water.

Peel pears, submerging each fruit in the water once skin is removed.

4 – Buff

With a clean scrubbing pad or kitchen towel, scrub the surface of each fruit—this will give pears a more even appearance.

5 – Package

Place each pear into a sous vide bag. Add 35 g of poaching liquid to each bag.

Vacuum seal bags or leave unsealed, placing the open edge of the bags over the side of the bath and securing there to prevent water from entering.

6 – Cook

Cook pears for 30 minutes, or until soft to the touch when squeezed.

7  – Make syrup

Open bags and carefully remove pears, reserving juices. Set aside.

Transfer juices to a pot and reduce on the stove until they form a light syrup.

8 – Serve!

Cut pears into thin slices and arrange on a plate or in a bowl. Pour syrup over pears and serve as is or top with Vanilla Bean Ice Cream, whipped cream, or other topping of choice.
